How We Make Tequila

Cooking & Crushing

Cooking & Crushing Blue agave takes 6-8 years to mature. If you've ever wondered about the process, we slow roast harvested agave in an oven to convert starches and caramelize sugars, carefully cooking each plant to avoid burnt, bitter flavors. Sugars are then removed from the cooked agave using an industry-standard, four-stage roller mill.

Fermenting

Fermentation is a fancy term for converting sugar into alcohol. It all starts by adding yeast, which comes from the same fields our agave tequila plant grows in for consistentency. The whole process occurs in large, shallow fermentation tanks to activate yeast.

What follows distilling?

Fermented sugars are filtered and distilled in small copper-lined pot stills. Unwanted "heads" and "tails" of the distillation are removed after each round so only the best ingredients move forward. We distill twice – no more, no less. Once to reach between 21-25% alcohol, and the second time to hit 53-55% alcohol, or the distillation percentage of tequila. Some people ask why we don't distill more, and it's simple. With tequila, the more you distill, the more flavor you remove...and that's just not our vibe.

Aging

This is where things get interesting. Our Tequila Reposado ages for an average of 8 months in a combination of Jack Daniels whiskey and Four Roses bourbon barrels, taking on flavors of not only the wood, but also the whiskey that seeps into it. Our Añejo Tequila needs about twice as long to age in the same barrels, resulting in a darker color. What about Tres Agaves Blanco? Although it can be aged for up to 2 months in wood, we don't age ours. Why? Because we prefer to let the pure, untouched agave flavor shine through in every sip.

This storied region is home to the towns of Tequila (where the spirit got its name) and Amatitán (our distillery location). Thanks to the nearby El Volcán de Tequila (Tequila Volcano), the area’s sandy, volcanic soil benefits agave growth by infusing spicy, herbal, earthy notes that our Tequila is known for.
